One interesting reference to Matt Talbot appears in the New Advent online version of Volume 11 (1911) of the complete Catholic Encyclopedia (1917).

Looking within the section labeled "About this page," you will see the subheading, "Transcription." It reads: "this article was transcribed for New Advent by Herman F. Holbrook. For the glory of God and in honor of the Venerable Matt Talbot."
In looking at other transcriptions by Mr. Holbrook, many but not all honor saints.
